Unbelievably Easy Tomato Soup with Grilled “Cheese” Sammies

The best way to reheat is to bring to a simmer and cook on low for about 2 hours. Still good if you don’t have the time, but those 2 hours to meld the flavors really does the trick! Serve with the best grilled “cheese” - whole wheat bread, vegan mozzarella, spinach, fried in olive oil.

Instructions

Put tomatoes, garlic, basil, tomato paste, sugar, and oil in a blender. Blend, adding vegetable stock until soup consistency and smooth. Season with salt and pepper to taste. Make ahead and store in the fridge for up to 24 hours. Heat over the stove top and serve.
