2 tablespoonssoy sauce
2 tablespoonswater
1 tablespoondry sherry
cooking wine, or vinegar
1 teaspoonsugar
½ teaspooncornstarch
¼ teaspoonpepper
¼ teaspoondry mustard
2 tablespoonsoil
1 poundgreen beans
trimmed and cut into 2" pieces
4 ouncesground turkey
3garlic cloves
minced
1 Tablespoonfresh ginger
grated
1 teaspoontoasted sesame oil
3green onions
sliced thin
rice
Warm, cooked
Instructions
Step 1
Whisk first 7 ingredients slowly in a small bowl until sugar dissolves.
Step 2
Heat oil in a 12" skillet over high heat until the first faint whisp of smoke appears. Add green beans and cook, stirring frequently, until crisp-tender and skins are blackened in spots, 5-8 minutes (reduce heat to medium-high if beans begin to darken too quickly. ) Transfer green beans to a large plate.
Step 3
Reduce heat to medium-high and add meat and green onions to empty skillet. Cook, breaking into smaller pieces, until no longer pink, ~2 minutes. Add garlic and ginger, cook 15-20 seconds. Whisk sauce to recombine and add to skillet with green beans. Stir to combine and cook until sauce thickens, 5-10 seconds. Remove from heat and add sesame oil.
Step 4
Serve immediately over white rice.
