The Best Vegan Vanilla Cake
I guarantee this is the best vegan vanilla cake you will make.
Start by adding the apple cider vinegar and applesauce to the soy milk in a glass measuring cup. Set that aside.
Next, mix together the flour, cake flour, baking soda and powder and salt in a bowl. Whisk and set aside.
Cream the butter, sugar, vanilla and aquafaba. Mix together for at least 5 minutes until it's light and fluffy.
After that, alternate adding the dry mix and milk mix, starting with 1/3 of the dry, then 1/2 the wet, 1/3 dry, half wet, rest of the dry. Mix until no more flour is showing. Finish mixing by hand to get the bottom of the bowl.
Divide the batter between two 8 in pans or three 6 in pans. Make sure they are greased/lined with parchment. Frost with my easy vegan Swiss meringue buttercream.
