These only last about a week in my fridge but they keep for a very long time. Perfect on salads, tacos, avo toast...you name it.

Step 1
-Place all ingredients except the onion in a small pot and bring to a boil.
-While the mixture comes to a boil, slice the red onion to desired thickness. I like mine about 1/4 inch thick so they retain some crunchiness after pickling. Anything thinner and they lose a bit of bite.
-Dump the sliced onions into the boiling mixture then turn off the heat. -Allow to sit in hot liquid for 30 minutes, the place in a jar and refrigerate and enjoy on everything!
