Save my recipe for Creamy Tomato Basil Soup! Shay is a picky eater and never had tomato soup before and one day she requested it because she saw it on tiktok. So I literally jumped at the chance that she was willing to try something new so I took extra care to make it as good as possible. She only eats a handful of foods so I took extra time to make sure that the creamy tomato basil soup was really good. It made me so happy to see her take her first bite and finish the whole bowl soup. It was a big win for me!

Instructions

Step 1
The ingredients are two pounds of tomatoes, 1 bulb of garlic, 2 shallots, 2 tbsp olive oil, 1/2 tsp salt, 1/2 tsp black pepper and 1 tsp dried oregano. I baked everything in the oven at 375F degrees for 25-30 minutes. I then added one tbsp olive oil to my pot with half a diced onion, 1 1/2 tbsp tomato paste and squeezed in the garlic from the pan. Then I added in the rest of the roasted tomatoes and shallots, Poured in 1 cup of chicken stock (you can also use vegetable broth), 1/2 tsp of salt, a handful of basil and blended everything until smooth. Lastly I poured in 1/2 a cup of cream
