Ingredients

1 lbbeyond beef
1yellow onion
diced
1 Tbspminced ginger
1clove garlic
2 tspchili garlic sauce
1 tspbrown sugar
1 Tbspolive oil
¼ cupsoy sauce
½ cupvegetable broth
1chili pepper
pepper
8 leavesbutter lettuce
½ cupshredded carrots
1 cuprice noodles
¼ cupbasil leaves

Instructions
Step 1
In a skillet over medium-high heat, cook onion and ginger until golden brown, about 4-5 minutes.
Step 2
Add minced garlic and Beyond Beef®. Cook according to package, about 8 minutes, mixing and crumbling the Beyond Beef.
Step 3
Stir in remaining ingredients: chili garlic sauce, brown sugar, olive oil, soy sauce, vegetable broth, and pepper (to taste). Bring to a boil then let simmer for 10-15 minutes. Broth should be mostly evaporated.
Step 4
While the Beyond Beef cooks, combine and mix all ingredients for Peanut Sauce in a bowl (find recipe here: https://my.whisk.com/recipes/101db91f6c2036d5a3ce6ff535282cbaa92e840b3d2).
Step 5
Prepare your assembly ingredients: shred carrots, separate lettuce leaves, slice chili pepper and cook rice noodles.
Step 6
To assemble: choose a piece of lettuce, add a scoop of Beyond Beef mixture. Top with rice noodles, carrots, pepper, basil and Thai Peanut Sauce. Roll together and enjoy!
