Instructions
Step 1
In large skillet over medium-high heat, warm oil. Once simmering add cumin seeds, cook less than one minute.
Step 2
Reduce heat and add fennel seeds, stir. Add onions and cook until translucent (4 to 6 minutes).
Step 3
Stir in potatoes, spread mixture into even layer, cover and cook 7 to 10 minutes. Until potatoes are tender but not mushy.
Step 4
Stir in red peppers and salt. Cover and cook 5 to 7 minutes. Until peppers are slightly soft.
Step 5
Scrape charred bits and stir into dish. Stir in crushed peanuts and lime juice.
