Creole seasoning

1 Tbssmoked paprika

1 tspchili powder

1 tsponion powder

1 tspgarlic powder

½ tspcayenne pepper

½ tspfine sea salt

½ tspblack pepper
Shrimp recipe

1 poundshrimp
peeled and deveined

2 tspcreole seasoning

¼ cupunsalted butter

⅓ cupall-purpose flour

1yellow onion
medium, finely chopped

2celery ribs
thinly sliced

1green bell pepper
seeded and finely chopped

4cloves garlic
minced

1 x 15 ouncecan tomato sauce no salt added

1 tsphot sauce
optional

1 tspgranulated sugar

½ tspdried thyme

½ tspdried oregano

½ tspdried basil

2dried bay leaves

¼ cupscallions
chopped

½ cupflat leaf parsley
Instructions
Step 1
Make the creole seasoning by combining all ingredients in a small bowl and stir together. Store in a closed container in a cool dry spot







Step 2
Toss shrimp with one teaspoon Creole seasoning and set aside


Step 3
In a Dutch oven, melt butter over medium low heat

Step 4
Sprinkle flour on top and stir constantly with a wooden spool until a roux the color of peanut butter forms, about 10 minutes

Step 5
Add the onion, celery, and bell pepper. Increase heat to medium and cook until softened, stirring occasionally, about 8 minutes.



Step 6
Stir in garlic until fragrant, 1 minute

Step 7
Stir it in 1/3 cup water, then the tomato sauce, hot sauce, sugar, thyme, oregano, basil, bay leaves, 1 1/2 tsp salt, 1/2 tsp black pepper, and remaining 1 tsp creole seasoning.








Step 8
Bring to a simmer, then reduce the h at to low.
Step 9
Cover and simmer 10 minutes until thickened, stirring occasionally to make sure the bottom doesn't burn. Add more water if needed.
Step 10

Once the stew is thickened, add the seasoned shrimp and er until opaque and cooked through, about 5 minutes, turning each piece halfway through cooking time.

Taste and adjust seasoning

Remove from the heat and let stand 10 minutes uncovered.
Step 13
Sprinkle with scallions and parsley and serve over rice.
