Loaded Sweet Potato Fries

Instructions

Step 1
1. Preheat the oven to 200C/390F

2. Slice the sweet potato into wedges, then place them on an oven tray lined with parchment paper together with salt and optionally oil (works fine without). Bake for about 20-30 minutes

3. Meanwhile, drain & rinse the beans, mince the garlic and add these to a pan together with the spices. Add oil or a few tbsp of water and let sauté/simmer for about 5 minutes, there should be no water left
Step 4
4. Prepare the toppings by dicing the onion, chop the tomatoes and cilantro. Mash the avocado with a fork and set aside
Step 5
5. In a small bowl or glass, combine the yogurt with lime juice
Step 6
6. When the potatoes are done, serve on a plate starting with sweet potatoes, beans, tomatoes, onion, avocado, vegan yogurt, jalapeños and cilantro!
