Instructions

Step 1
Cut soft tofu into small pieces. In boiling water, add a tablespoon salt, and add tofu to boiling salt water. This step reduces the tofu beany flavor. Remove tofu from boiling water after 1-2 minutes. (将豆腐切成小块。在沸水中加入一茶匙盐,将豆腐加入煮沸的盐水中,煮1-2分钟后捞出备用。)
Step 2
To ground beef or pork, add cooking wine and ginger, and mix together. Let sit for 5 minutes, this step removes the earthy flavor off meat. While waiting, cut celeries in small pieces. (在猪肉或牛肉沫中加入料酒和姜,静置5分钟去除肉腥味。在等待过程中将芹菜切成小块备用。)
Step 3
Heat frying pan over mid-high heat, and add avocado oil. Add minced garlic, sichuan chili pepper and ginger, stir fry for 30 seconds. Add soybean paste to the pan, and stir fry till it melted to a thin sauce consistency. (起锅烧油,加入姜、花椒和蒜末。爆炒30秒后加入豆瓣酱,炒出红油。)
Step 4
Add ground meat to the pan, stir fry until tender. Add celeries to the pan, and stir fry for 3-5 minutes. (豆瓣酱炒香后加入肉末,炒至变色后加入西芹,翻炒3-5分钟。)
Step 5
Add tofu to the pan, and continue to stir fry for 1-2 minutes. Add soy sauce, sugar, and chili pepper, and mix together. Add water or potato starch water to the contents if needed. (加入豆腐继续翻炒1到2分钟。加入生抽、糖和辣椒面调味。如果锅中食材炒的太干的话可以加点水或者水淀粉。)
