Instructions
Step 1
Cut ginger into small slices and put pig snout in a pot filled with water, add in scallion, Szechuan peppercorn, cooking wine and sliced ginger, bring water to boil for about 20 minutes.
Step 2
Slice garlic, ginger, scallion and Fresh Thai chili &pickled green chili.
Step 3
Remove cooked pig snout from the pot and slice it into small thin slices.
Step 4
Add cooking oil in a heated pan, further add sliced pig snout meat in to stir fry until they are golden brown(this is to get rid of excessive oil from the meat if needed), remove from the heat.
Step 5
Add some more cooking oil(if needed),put sliced garlic, ginger, Thai chili and pickled chili to cook for 10 seconds, further add in Pi Xian Bean Paste to mix for under a minute on medium heat. Finally, add in precooked pig snout meat to stir fry until they are fully seasoned. Garnish with scallion, and season with sugar and chicken powder, ready to serve.
