Step 1
Slice and smash ginger and scallion(both in small segments and chopped finely). Put evenly cut pork spare ribs, sliced ginger, cooking wine (2tbs), Szechuan peppercorn and white part of scallion in a pot filled with water, bring to boil for approximately 5-10 minutes. Transfer blanched pork spare ribs from the pot to a bowl.
Step 2
Mix sugar, dark vinegar and light soy sauce in a bowl to make sweet and sour sauce.
Step 3
Pour olive oil in a heated pan, then add pork ribs, smashed ginger, sliced scallion and cooking wine (1 tbs) to stir fry until ribs become golden brown. Further add a few spoons of sweet and sour sauce to stir for a minute, so you get a nice and brown coloring.
Step 4
Finally, pour the remaining sweet and sour sauce in the ribs, add in water ( water level just above the ribs) to mix and bring to boil on high heat.
Step 5
Once broth starts boiling, simply switch the heat from high to medium low and continue to simmer for 30+ mins. Remove scallion and ginger from the pot during this process.
Step 6
Adjust heat to medium high to cook for another 10 minutes to dry out excessive sauce. Garnish with white sesame seeds and chopped scallion, it’s ready to serve.
