Chicken stir-fry

You can substitute chicken with prawns or add both to the stir-fry. You can also add any other vegetables you like in stir frys but i prefer it like this. Other vegetables to use in stir-frys: mushrooms, carrots, sugar snap peas, green onion, baby corn, cabbage, zucchini etc.

Instructions

Step 1
Fry the chopped onion and garlic paste until it changes colour
Step 2
Cut chicken breast into thin strips and add to the pan
Step 3
Add salt, black pepper, paprika, ginger and garlic powder and red chilli flakes and fry on high heat for a couple mins
Step 4
When the chicken changes colour, add 2tbsp tomato paste. Cover and cook on low heat for 15-20mins. (The chicken will cook and also release some juices in the meantime and that can be used as sauce for noodles too)
Step 5
Cut onion and bell peppers thinly and add to the cooked chicken
Step 6
For the stir-fry sauce, mix soy sauce, mustard, sesame oil, samyang, chilli garlic sauce and hoisin sauce. (You can use any other sauces you like too but this is the combination i like and use all the time. The samyang sauce is a must try if you like spicy foods. You can also purchase ready made stir fry sauces. I like the blue dragon oyster and spring onion sauce or supermarket own brand)
Step 7
Add the sauce and stir-fry the vegetables and sauce with the chicken for a couple mins on high heat and turn it off
Step 8
Cook the egg noodles as per packet instructions and add to the stir fry (i use Blue dragon medium egg noodles. You can use fresh ones too or another brand as long as you cook per the instructions.
Step 9
I like to serve the stir fry with chilli oil for extra heat
