Instructions

Step 1
Cook the brown rice noodles and set aside (about 4-5 minutes)
Step 2
Add the lemongrass, shallots, garlic, ginger, chilli and spices in a large pot on medium heat with some light olive oil for 3-4 minutes
Step 3
Add the veg stock and tamari and simmer for 20 minutes
Step 4
Add the mangetout for the last 2 minutes of cooking
Step 5
Take off the heat and serve in bowls with the cooked brown rice noodles
Step 6
Garnish with the watercress, bean sprouts, herbs and lots of lime
