Ingredients
4 servings
225grigatoni pasta
1 packagecherry tomatoes

cuptomato paste
1 tspanchovy paste
4garlic cloves
minced
3shallots
or 2 teaspoons onion powder
3 Tbspolive oil
8 ozburrata
or burratini
ยฝ tsporegano
12basil leaves
2 Tbspunsalted butter
salt
to taste
pepper
to taste
ยฝ cupPasta water
reserve

Instructions
Step 1
Bring a large pot of water with some salt and pepper to a boil
Step 2
Once boiling, add your rigatoni and cook for about 10-12 minutes
Step 3
While the pasta cooks, wash your produce (basil, spinach, cherry tomatoes) and chop accordingly except for the tomatoes
Step 4
Also peel and mince the garlic and shallots
Step 5
Wash basil and tomatoes. Chop basil and poke holes in the tomatoes
Step 6
Once the pasta is done, reserve half a cup of the pasta water, then drain the pasta in a colander
Step 7
In a large pan, add 2 tbsp olive oil and the garlic and shallots on medium heat. Sautรฉ/cook for 5 minutes
Step 8
Then add the anchovy paste and cook for 2-3 minutes, stirring occasionally
Step 9
Add in the tomato paste + remaining 1 tbsp olive oil and cook for 5 minutes
Step 10
Add in the cherry tomatoes and cook for another 5 minutes
Step 11
Add in the cooked pasta and pasta reserve. Then add salt, pepper and oregano as well as butter and basil, then mix well
Step 12
Preheat oven to 350 degrees before you transfer the pasta into a baking dish
Step 13
Layer or top the pasta with spinach and chunks of burrata before baking for 7 minutes
Step 14
Once baked, you can sprinkle parmesan on top before serving
