Haloumi & Veg Tray Bake

Instructions

Step 1
Preheat oven to 200C and line two trays with baking paper.
Step 2
Add onions and carrots to the first tray, and asparagus, zucchini and haloumi to the second tray. Sprinkle oregano over haloumi and drizzle olive oil over all vegetables and haloumi.
Step 3
Place the first tray in the oven for 25 minutes.
Step 4
After 10 minutes, add the second tray to the oven for the remaining 15 minutes.
Step 5
Meanwhile, make dressing by combining yoghurt, honey, lemon juice and some cracked pepper in a small bowl.
Step 6
Remove trays from oven, drizzle over dressing, sprinkle with pepitas and serve!
