Instructions
Step 1
Finely chop kale and toss with olive oil and lemon juice. Let this sit to allow it to soften up.
Step 2
Cook the quinoa then let cool.
Step 3
Chop the tomatoes and onion and mix together with the quinoa and kale. Add more oil/lemon as needed and season with salt and pepper.
