Instructions
Step 1
Chop onions and caramelize them in a large pot with olive oil and butter.
Step 2
Once fully caramelized, add in dry sherry and let it reduce by 80%.
Step 3
Add beef stock and thyme, bring up to a boil for 15 minutes then season with salt.
Step 4
Pour soup into bowls along with a layer of cheese, toasted baguette slices, and more cheese on top.
Step 5
Set in broiler until cheese is melted then garnish with chives.
