Cajun Garlic Butter Clams

Been meaning to make this dish. Has been on my list for a while. My first take came out bad. I used too much butter and not enough of spice blend, also i think I don’t need salt in my spice blend because I am using salted butter. Still trying to work that part out. I am happy though with my cajun spice blend to share with y’all!!

2 Tbspoil
4 ozsalted butter
½ cupgarlic
chopped
2 ozsparkling coconut water
2 Tbspfresh lemon juice
Cajun Spice Blend
1 Tbsplemon pepper
1 Tbspgranulated garlic
1 Tbsponion powder
1 Tbspcajun spice
1 Tbspold bay
1 Tbspcoriander
2 Tbspchili powder
2 Tbsppaprika
4 Tbspcayenne
1 tspsalt

Instructions
Step 1
1. Clean clams by soaking in fresh water for 1 hour, rotating water every 20 minutes
Step 2
2. In a large pan, add oil, butter, garlic and sauté until garlic is light golden
Step 3
3. Lower the heat, add in cajun spice blend and incorporate
Step 4
4. Squeeze fresh lemon juice and add sparking coconut water
Step 5
5. Let the mixture reduce to 2/3rds of its original amount
Step 6
6. Add in manilla clams and the optional potatoes and corn
Step 7
7. Steam for 10-12 minute, longer if clams haven’t fully opened
Step 8
8. Plate and pour over the sauce
