Pecan-Crusted Chicken and Tortellini with Herbed Butter Sauce

Ingredients
4 servings
2 x 9 ozrefrigerated cheese-filled tortellini
package
4 x 4 ozchicken breast cutlets
½ tspsalt
¼ tsppepper
freshly ground
¾ cuppecans
finely chopped
1egg
large, lightly beaten
3 Tbspextra virgin olive oil
½ cupbutter
3garlic cloves
thinly sliced
3 Tbspfresh basil
chopped
3 Tbspfresh parsley
chopped
¼ cupshredded parmesan cheese
Instructions
Step 1
Prepare pasta according to package directions.
Step 2
Meanwhile, sprinkle chicken with salt and pepper.
Step 3
Place pecans in a shallow bowl.
Step 4
Place egg in a second bowl.
Step 5
Dip chicken in egg, allowing excess to drip off.
Step 6
Dredge chicken in pecans, pressing firmly to adhere.
Step 7
Cook chicken in hot oil in a large nonstick skillet over medium-high heat 2 minutes on each side or until done.
Step 8
Remove from skillet; wipe skillet clean.
Step 9
Melt butter in skillet over medium heat.
Step 10
Add garlic, and sauté 5 to 7 minutes or until garlic is caramel-colored and butter begins to turn golden brown.
Step 11
Immediately remove from heat, and stir in basil, parsley, and hot cooked pasta.
Step 12
Sprinkle with cheese.
Step 13
Serve immediately with chicken.
