Instructions
Step 1
Grill or roast the shallots and garlic with skill on until soft and gently charred on outside (roughly 5 min). Leave to cool then peel.
Step 2
Meanwhile, slice ginger into thin pieces and julienne them. Slice lemongrass thin.
Step 3
Combine Ginger, lemongrass, chilies, cardamom pods, cloves, peppercorn, coriander and cumin seeds in a small dry skillet and toast over medium heat until fragrant, for 3 to 5 minutes tossing every 20-30 seconds so the spices don't burn; let cool.
Step 4
Remove the stem and seeds from the chilis and roughly break up.
Step 5
Gently crush pods and remove cardamom seeds from pods; discard pods.
Step 6
Grind spices in spice mill or with mortar and pestle.
Step 7
Put everything with remaining ingredients in food processor and blend until smooth.
