Instructions
Step 1
Preheat the oven to 425*. In a mixing bowl put flour, baking powder, sugar (white is fine, tho I often use sucanot). Mix well. I use the wiz-bang (kitchen aid) and let it run while I measure out things.
Step 2
Then add egg, oil and milk and mix well.
Step 3
Drop onto greased foil/baking sheet.
Step 4
Bake 12 - 14 minutes , the edges will brown.
Step 5
Sometimes I like to get my hands damp and roll a lump of dough in my hands then flatten it out to about 1/2" to 3/4" thick and bake them that way -- this way is good to use as a 'bun', can be sliced and toasted (he loves them this way with honey or 'no-sugar-added' jam), or used for sandwiches.
Step 6
Toasting them, if you flatten them, seems to help them hold together better. Also, I usually use 2% milk. If you use a higher fat content it makes them more flakey (which is yummy, but they fall apart easier). Hmmmmm, can't think of anything else.
