Step 1
Mix together the tuna, diced onion, grated carrot, lemon juice, mayo, Dijon mustard and parsley. Add salt and pepper to taste and mix well. Refrigerate for a few hours or ideally overnight.
Step 2
Preheat the oven to 350 degrees. To assemble the sandwich, spread a thick layer of the tuna salad on a slice of marble rye. Top with a slice of provolone and the other slice of bread. Toast in the oven for 10 minutes or until the cheese is melted and the bread is crisp. Serve immediately.
