Rice
3 cupsbasmati rice
4 Tbsolive oil
1onion
Medium, chopped into 1" pieces
4 ½ cupschicken broth
2bay leaves
1lumi
black lime, cracked
1 ½ tspground cinnamon
1 tspground turmeric
1 tspground cloves
1 tspground black pepper
1 tspground cardamom
1 tspground cumin
1 tspsalt
Vermicelli
Instructions
Rice
Step 1
Rinse rice 3x and soak for 10 min.
Step 2
In a medium sized pot, heat olive oil over medium heat. Add onion and saute for 10 min.
Step 3
Add seasonings and chicken broth and bring to a boil.
Step 4
Add rice; cover and let simmer until rice is done. (Check rice package for cooking instructions)
Vermicelli
Step 5
In a medium pan, heat oil over medium-low and fry lightly salted potatoes until brown. Remove from pan and put aside.
Step 6
Add raisins to the pan and saute for less then 30 seconds. Then remove from pan and put to the side with potatoes.
Step 7
Put the pasta pieces into the pan till lightly brown, stirring occasionally. Then add water and cardamom to the pasta. Let sit until soft and water is evaporated.
Step 8
Add potatoes and raisins to the pan and cook over medium heat for 5 minutes while stirring continuously.
