Instructions

Step 1
Season fish with marinade and leave aside for 10 minutes. Combine ingredients for buttermilk crisps in a bowl.

evaporated milkevaporated milk200ml

Step 2
Melt butter in the wok over very low heat. Once butter starts to melt, add combined ingredients for buttermilk crisps. Stir continuously over low heat until the oil separates and the liquid resembles coarse sandy granules. Dish out & strain the oil.

Step 3
Heat enough oil in a wok until hot and deep-fry marinated fish until golden brown and crispy.. Drain from oil.
Step 4
Return the coarse sandy milk crisps to the wok, add chili padi and pandan leaves. Fry briskly until aromatic. Put back the fish and add seasoning. Mix well.
