Okonamiyaki
This is an Osaka style Okonamiyaki-Japanese cabbage pancake, the cool thing about it is you can put whatever you want in it, shrimp, pork, pickled ginger, curry powder, and any topping you want.

Instructions
Step 1
Mix 1 c flour and 1 c dashi (or water) and add grated nagaimo, just mix enough so there’s no clumps and rest covered in the fridge for 1 hour
Step 2
While batter is resting slice your cabbage and chop roughly into small pieces. Slice white part of green onions and add to cabbage
Step 3
When batter is rested mix in 1 whisked egg, add cabbage. Add tenkasu and season with salt and any additional seasonings.
Step 4
In an oiled non stick pan add enough mix to cover pan and rise about 1/2 inch
Step 5
Cook 4-5 minutes until browned, layer on pork belly if using. Slide pancake onto plate then place your pan on top and carefully flip(or use two large spatulas if you can manage)
Step 6
Baste top with okonamiyaki sauce and Cook an additional 5 minutes until browned
Step 7
Get that thing out of the pan any way you can, place a plate on top and flip, use spatulas, do a cool flip, I believe in you
Step 8
Top with more Okonamiyaki sauce, kewpie, bonito flakes, or any desired toppings
