MUSTARDY SKILLET SAUSAGES WITH CIDER & APPLES

Now here's a warming Bonfire Night feast... Cider and mustard-braised sausages work a treat with the sweet caramelised apple wedges. Serve with a large helping of buttery mash and seasonal greens.

1 Put the oil in a large skillet or frying pan over a medium heat. Fry the sausages for 7-8 minutes, until browned all over (you'll cook them further later), then transfer to a plate. Cut each apple into 6 wedges. Add to the pan with the butter and fry f

2 Add the onion wedges to the pan, reduce the heat a little and fry for 10 minutes, until starting to soften. Stir in the flour and mustard, then after 1 minute, slowly whisk in the cider. Turn the heat up and bring to the boil; season. Return the sausages and apples to the pan, reduce the heat to medium-low and simmer for 25 minutes, You should have a rich sauce at the bottom of the pan, tender apples and onions, and the sausages should be cooked through with no pink meat remaining. Scatter over the tarragon and serve with mash and greens, if liked.
