Instructions

Step 1
1 Add 1 tablespoon of cooking oil to a pan and toast the 1/2 cup of fonio for about 2minutes at low heat.
Step 2
2 Add 3/4 cup of water and a pinch of salt to the fonio and turn the heat to high. Let it boil for about 2 mins, then turn the heat to low. Cook it until all the liquid is absorbed.
Step 3
Fluff the fonio with a fork and remove from the stove then set aside
Step 4
3 Add 2 tablespoons of cooking oil to a pan, stir fry diced green, red, yellow bell pepper and optional cooked beans with minced garlic, chili pepper and a pinch of bouillon.
Step 5
Add the stir-fried veggies to the cooked fonio and mix well then serve.
