Instructions
Step 1
Boil the chicken in salty water. Boil it as long as it takes to make it really soft. One it is ready, take it out from the water and let it cool. It may be better to avoid using the breast because it tends to get too dry.






Step 2
Prepare some garlic clove, lime zest. Mince the ginger.






Step 3
When the chicken is cold, remove the skin and the bones so you just keep the meat. Slice the meat roughly.




Step 4
Pour a couple of spoon of olive oil into a wok with some garlic, ginger, lime zests and laurel. When the oil is hot, ease down the chicken. Stir for a minute, and then add some paprika and lime juice. Stir again and cook the meat for another five minutes. Remove the lime zests and laurel and put the chicken into a large bowl.











Step 5
Mince carrots, celery and tomatoes and put the into the bowl with the chicken. Add the corn too.





Step 6
Put a pot on the stove with the water. Usually the water is twice the weight of the cous cous but adjust the quantity according to what is written in the cous cous box. Heat up the stove and once the water starts boiling switch it off and put all the spices in the water. Mix it with a spoon for few seconds and then add the cous cous too. Cover with a lid and shake the pot horizontally for a minutes. Let it rest now for 15 minutes.
Repeat the procedure that has been done before the cous cous preparation and shell it gently with a fork, layer by layer.














Step 7
When the cous cous is cold, put it into a bow with some olive oil. With a fork shell the cous cous for a couple of minutes.




Step 8
Now you can mix the cous cous all together with the other ingredients.
