Instructions
Step 1
Whisk together melted butter and eggs in a bowl. Add the milk, and whisk until just combined.
Step 2
Add the remaining ingredients for the pancakes, whisking until the batter is smooth.
Step 3
Heat a griddle or skillet over medium heat. Pour the batter onto the skillet in 3 to 4 inch rounds, cooking until golden brown on each side. Set aside to cool.
Step 4
In a bowl, combine the whipping cream, the powdered sugar, and espresso powder; use a hand mixer to whip until soft peaks form.
Step 5
In another bowl, beat the mascarpone until smooth. Add the whipped cream mixture, and fold together until combined.
Step 6
Spread a layer of the mascarpone filling between each layer of the cooled pancakes. Top with more filling, and sprinkle with cocoa powder. Serve on a dessert pedestal, if you have one and slice to eat.
