Ingredients

1.5 lbsboneless skinless chicken breasts
cut into 1/2" cubes
1 cupchopped onion
3 Tvegetable oil
15 ozcan cannellini beans
or white kidney, rinsed and drained
14.5 ozcan diced tomatoes
undrained
14.5 ozcan diced tomatoes with mild green chiles
undrained
1 cupfrozen corn
1 tspsalt
1 tspground cumin
1 tspminced garlic
½ tspcelery salt
½ tspground coriander
½ tsppepper
8 ozsour cream
8 ozshredded cheddar cheese
cornbread
Instructions
Step 1
In large skillet, saute chicken and onion in oil for 5 minutes or until chicken is browned. Transfer to 5 quart slow cooker. Stir in beans, tomatoes, corn and seasonings. Cover and cook on low for 5 hours or until chicken is no longer pink. Garnish with sour cream and cheese if desired.
