Aubergine and Tomato with Mozzarella Cheese

Instructions

Step 1
Preheat the grill pan to medium-high heat. Sprinkle sliced aubergine with salt and pepper and cook them for 2-3 minutes per side.
Step 2
Use a sharp knife to score a small 1-inch size “X” on the bottom of the tomatoes. Place them in a bowl and pour in boiled water. Leave for a few minutes and Immediately transfer the tomato to a bowl filled with ice water. Then peel the skin and slice.
Step 3
Slice the mozzarella.
Step 4
Preheat the oven to 180C.

Pour the small amount of tomato sauce into the round ovenproof dish, just enough to cover the bottom. Then, layer your aubergines, remaining sauce, tomatoes and mozzarella.
Step 6
Bake for 25 minutes, or until sauce is bubbling and cheese is melted.
Step 7
Garnish with basil and enjoy.
