Ingredients
4 servings
3 Tbspextra virgin olive oil
1brown onion
finely diced, fresh or frozen
1 Tbspgarlic
crushed, fresh or jarred
200gmushrooms
250glean beef mince
1tin lentils
drained and rinsed
750mlbolognese sauce
2 cupsbaby spinach
To Serve
Instructions
Step 1
Heat the oil over medium-high heat in a saucepan and saute the onion until they start to soften.
Step 2
Add the garlic and mushrooms to the pan and sauté.
Step 3
Add the mince and stir until browned. Add the lentils and tomato sauce to the pan.
Step 4
Bring the sauce to a boil and turn the heat down to low. Simmer the sauce until it thickens (about 20 minutes).
Step 5
Meanwhile, cook the pasta and veggies.
Step 6
Stir the spinach leaves through the bolognese before serving (to allow to wilt).
