Instructions
Step 1
Mix the grated carrot, corn, cornflour and eggs in a bowl and stir well. Season as desired.
Step 2
Use a non-stick frying pan and pour in your coconut oil to cover the base of the frying pan well.
Step 3
Drop 1/2 a soup spoons worth of the mixture into the pan and then flatten slightly.
Step 4
Cook for 2-3 minutes or until golden brown. Turn over to achieve the same result on the other side.
Step 5
Transfer to a plate with paper towel to remove any excess fat.
Step 6
Cover with foil to keep them nice and hot.
Step 7
Make the remaining fritters.
Step 8
Then divide up the fritters, add the avocado and tomato and place on plates. Sprinkle with mint. Season and drizzle with olive oil.
Step 9
Finished fritters can be kept in the fridge for 2 days and reheated or even frozen.
