Ingredients
7 servings
1 x 15 ozcan black beans
rinsed and drained
1 cupfresh corn
or thawed frozen
6 ozroasted red bell peppers
cut into thin strips or coarsely chopped
½ cupred onion
chopped, or yellow, divided
⅓ cupchipotle sauce
mild, or regular salsa
2 Tbspcider vinegar
or lemon juice
2 ozpart skim mozzarella cheese
parts, cut into one quarter inch cubes
Instructions
Step 1
place all ingredients except cheese and 1 tbsp onion in a medium bowl period tossed gently to blend well. let's stand 15 minutes to blend.
Step 2
Just before serving, gently fold in all but two tablespoons of cheese. Sprinkle remaining cheese and reserved onion on top.
