Nori burrito with avocado, tofu & cashew cheese

⚡️I got that recipe from one of my cooking books all about avocado recipes. I bought it in my fav bookstore in Paris dedicated to only cooking books (Librairie Gourmande, Rue Montmartre, 2 arr.)
⚡️if you don’t have time to prepare a cashew cheese, replace it with hummus (homemade or taken from the supermarket shelf)
⚡️you can also choose rice paper instead of nori

soak raw unroasted cashews in hot water and leave for ~1 hour

cut tofu into thin sticks and grill it on a dry grill pan

drain the water from cashews and put the nuts in a blender, adding all the other ingredients: garlic, lemon juice, nutritional yeast and spices. blend until it’s creamy. if too dense - add some warm water

cut all the vegetables into thin sticks

lightly sprinkle nori sheets with water, put cashew cheese, vegetables, tofu and parsley leaves. wrap it as a roll
