Instructions

The Marinade

Step 1
Place 4 Tbsp Yoghurt in a bowl. Add 3 Tbsp oil, 1 Tsp Black pepper, 1 Tsp Salt, 1 Tsp Paprika, 1 Tsp Garlic, 1 Tsp Cumin, 1 Tbsp Tomato puree, and 2 onions peeled & quartered.

Add the Chicken

Take 600g Chicken breast and cut into sizable lumps to fit on a skewer, then place in the marinade and coat all over. Seal the bowl and place in the fridge for minimum 2hrs, left overnight is better.

Marinating the Red & White Cabbage

Step 3
Thinly slice half a Red Cabbage and half a White Cabbage. Place into separate containers with lids. Add 4 Tbsp Lemon juice and 1 Tsp Malt vinegar to each container. Cover and shake to coat the cabbage. Leave for a minimum of 2hrs, overnight is better.

Flat Bread mixture

Step 4
Place 350g SR Flour in a bowl and add 350g Yoghurt, 1 Tsp Salt, 1 Tsp Baking Powder. Mix together to form a dough

Making the Breads

Step 5
Separate the dough into 6 equal portions and roll out. Add some flour to your work surface to prevent it from sticking, roll the dough after its been chilled in the fridge. A rough shape about 25 - 30cms is what you want

Cooking the Bread

Step 6
Add a Tbsp oil to a frying pan and fry the bread for about 1 minute each side

Cooking the Kebabs

Once the chicken has marinated thread onto skewers and separate using the onion in the marinade and chunks of Red Yellow and Green pepper. Cook in the air fryer for about 20 minutes at 180

The Salad

Step 8
In a large serving bowl place the red and white cabbage, add some thinly sliced Iceberg lettuce and white onions. Chop some tomatoes and slice some cucumber. Top of with a few pickled Jalapenos.

Build your Kebab and add the dressing of your choice

Step 9
Build the kebab by placing red and white cabbage on the bread, followed by onion and iceberg lettuce topped off with tomatoes, cucumber and Jalapenos. Strip the skewer of chicken pepper and onion to let it lay across the salad. Add a dressing of your choice.
