Tuscan Salmon with Pasta

Instructions

Step 1
Heat the olive oil in the frying pan over medium heat.
Step 2
Sear the marinated salmon in the hot pan flesh-side down for 5 minutes.
Step 3
Flip and saute on the other side of the salmon until well done.
Step 4
Transfer the salmon from the pan and set it aside.
Step 5
Boil a saucepan of water and cook the pasta for 8 minutes.
Step 6
Strain the pasta and set it aside.
Step 7
Heat up the same pan.
Step 8
Melt the butter in the remaining heated cooking juices over medium heat.
Step 9
Add in garlic and saute until fragrant.
Step 10
Add in diced onions and baby tomatoes to stir.
Step 11
Add in whipping cream and bring the mixture to a low simmer while stirring often.
Step 12
Season the cream sauce with salt and pepper.
Step 13
Add the baby spinach and allow it to wilt in the sauce.
Step 14
Add in parmesan cheese and allow the cream sauce to simmer until the cheese melts.
Step 15
Transfer the salmon fillet and pasta back into the pan and cook for 2 minutes.
Step 16
Garnish with chopped parsley and spoon sauce over the salmon fillet.
Step 17
Serve.
