Instructions

Step 1
mix flour and water. Set Timer 1hr
Step 2
add sourdough starter and stir. Set Timer and proof 30min
Step 3
add salt and mix w/ hands. Set Timer and proof 30min
Step 4
Fold dough. Set Timer and proof 30 min
Step 5
Fold dough. Set Timer and proof 45 min
Step 6
Gently pull dough. Set Timer and proof 1 hr 30 min
Step 7
Pre-shape on counter w/ scraper. Set Timer and proof 30 min
Step 8
Shape and place in benetton. Set Timer and proof 30 min
Step 9
Store covered overnight in refridgerator
Step 10
Preheat Dutch Oven to 515degrees. for at least 30min
Step 11
Place dough on parchment. Score. and bake in Dutch Oven for 17min
Step 12
Remove Dutch Oven lid. Reduce Temperature to 400 degrees and bake for 23min
Step 13
Turn off Oven, and crack oven door for 20min
Step 14
Place bread on cooling rack for at least 1hr
