Step 1
Brown one stick of butter and set aside to cool in a medium bowl. Sift together the flour, baking soda and salt; set aside.
Step 2
Add the remaining stick of butter to the cooled brown butter and whisk until combined. Add the brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chopped chocolate and chocolate chips. If the dough is still too soft, chill for 30 minutes.
Step 3
Drop the cookie dough 1 - 2 tbsp at a time on a lined baking sheet and chill for refridgerate for a minimum of 1 hour or a maximum of 24 hours for best results.
Step 4
Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper. Arrange the chilled cookie dough on the sheet with 2 inches of space between each. Bake for 15-18 minutes or until the edges are slightly browned. Cool on the baking sheet for about 10 minutes then transfer to a wire rack to finish cooling. Enjoy!
