Instructions

Step 1
Combine the rice and 2/3 cup water in a 1 qt saucepan. bring to boil, cover and reduce heat to low. simmer until rice is tender and water is absorbed, about 40 minutes. transfer rice to large bowl and let's stand until cooled to room temperature, about 20 minutes.
Step 2
Heat 1 tablespoon of canola oil in a 12" skillet over medium low heat add The Onion and cook stirring frequently until Brown and softened about 10 minutes increase the heat to medium high and add the mushrooms and a pinch of salt cook stirring occasionally until mushrooms are browned about 7 minutes reduce heat to medium add the garlic and cook stirring for 30 seconds add the soy sauce and stir scraping up Brown bits at the bottom of the Pan until nearly evaporated about one minute
Step 3
Transfer the mushroom mixture to a food processor add the edamame, cashews,arrowroot and sesame seeds then pulse until finely chopped with few flex of edamame and cashews are still visible about transfer the mixture to a bowl with rice and stir thoroughly to combine season to taste it was salt and pepper stir in egg chill the mixture for at least 30 minutes and after 4 hours
Step 4
Portion the mixture into balls with moist hands form 3 -1/2 inch patties about 3/4 inch thick
