Instructions
Step 1
Make a med to dark roux by getting the oil smoking hot and adding the flour all at once. Or the tradition method that takes 30 minutes.
Step 2
Once the roux is as dark as desired, add the onions and celery and stir
Step 3
Make a well in the chunky mess and add garlic and let sit for about 30 seconds or until fragrant
Step 4
Stir in green chilis and can of tomatoes (slowly if very moist) and let sweat for a bit (few minutes).
Step 5
Add chicken stock, bring it to a boil, reduce to a simmer and let sit while cooking meat
Step 6
Cube pork, add salt and pepper, and toss in flour until pieces are coated
Step 7
Brown pork on all sides and dump into stew pot
Step 8
Deglaze pork pan with Guinness and pour into stew pot
Step 9
Cook Chorizo till well done, add to stew pot
Step 10
Let simmer for at least an hour (longer is better), salt and pepper to taste and serve.
