Ingredients

1avocado
ripe

¼ cfresh flat-leaf parsley

3 Tbspfresh tarragon

1 tsplemon zest

3 tablespoonslemon juice

3 Tbspolive oil

1clove garlic
small

2anchovy filets

1 x 75 ounce bunchfresh chives
divided

kosher salt

freshly ground black pepper

3 headslittle gem lettuce
or 1 small head green leaf lettuce, torn

3Persian cucumbers
English cucumber, sliced

3tomatoes
large, cut into wedges

black pepper
to taste
Instructions
Step 1
Puree avocado, parsley, tarragon, lemon zest and juice, oil, garlic, anchovies, and 1/4 cup chives in a blender. Season with salt and pepper. Thin with additional lemon juice or water if needed.
Step 2
Cut remaining chives into 1/2-inch pieces. Toss together lettuce and half of the dressing; arrange on a platter. Top with cucumbers, tomatoes, and remaining chives. Drizzle with remaining dressing. Season with pepper.
