Full of lemon and spice, this easy sumac chicken sheet pan meal is healthy and fast. Adding a baked potato, whole grain, or legume side dish, such as French Lentil Salad with Parsley and Mint (page 74), creates the per fect weeknight dinner solution. The skin stays on in this recipe, but you can remove it to decrease the overall saturated fat in the dish. The chicken will still be flavorful and moist.

Step 1
1 Preheat the oven to 425°F. Line a baking sheet with parchment paper or foll.
Step 2
2 In a large bowl, whisk together the olive oil, sumac, salt, cumin, and black pepper. Add the chicken, cauliflower, and carrots and toss until thoroughly coated with the oil and spice mixture.
Step 3
3 Arrange the cauliflower, carrots, and chicken in a single layer on the baking sheet. Top with the lemon slices. Roast for 40 minutes, tossing the vegetables once half way through. Sprinkle the lemon juice over the chicken and vegetables and garnish with the parsley and mint.
