Instructions
Step 1
Using a sauté pan turn heat to medium-high. Add in chopped red onion and vegetable broth. Sauté until onions are translucent.
Step 2
In a large bowl mix together black rice, chickpeas, cooked onions, cucumbers, white miso paste. Mix together.
Step 3
Serve with black pepper and dried parsley sprinkled on top.
