Avocado Pasta with Roasted Garlic Butter Steak Bites
Here’s my take on avocado pasta with some roasted garlic butter steak bites on top. So yummy!

Ingredients

2Avocados
ripe
2 lbssirloin steak
16 ozpasta
I used rotini
1 headgarlic
plus 2 cloves
1shallot
2 cupsbaby spinach
packed
¼ cupparmesan
freshly grated, plus more for serving

black pepper

chicken broth
enough to cook pasta in
6 Tbspsalted butter
2 Tbspfresh parsley
plus more for serving
1lemon
Red pepper flakes

Instructions
Step 1
Start by cutting the top off the head of garlic, place on a piece of aluminum foil, drizzle with 1 tbsp of oil, sprinkle with kosher salt, wrap tightly with the foil, then air fry at 400 degrees Fahrenheit for 25 minutes. (Or roast in oven at 400 degrees Fahrenheit for 45 minutes.)
Step 2
Bring chicken broth to a boil (enough to cover the pasta) I used 80 ounces of broth.
Step 3
Roughly chop up 1 shallot & 2 garlic cloves
Step 4
Cut steak into 1 inch cubes & transfer to a bowl (I used sirloin but ny strip or ribeye will also work)
Step 5
Season steak with salt & pepper to taste + 1 1/2 tsp of garlic powder, 1 1/2 tsp of onion powder & 1/2 tsp of dried basil. Drizzle with 1 tbsp of oil & toss until seasonings are distributed evenly. (I recommend using at least 1 1/2 tsp of salt for the 2 lbs)
Step 6
Once broth comes to a boil, add pasta and cook until al dente. Drain pasta into a colander (save 2 cups of the broth!) then toss noodles with 2 tbsp of butter so they don’t stick together
Step 7
In the same pot pasta cooked in, heat up 2 tbsp of oil over medium heat, add in the garlic & shallots and cook until translucent/fragrant. Then add in the 2 cups of packed baby spinach & sauté until wilted. Transfer garlic, shallots & spinach to a blender
Step 8
To blender, add 2 ripe avocados, juice of 1 lemon, 1/4 cup of freshly grated parmesan, 1 tbsp oil, salt & pepper to taste, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp dried basil & start with 1 cup of broth. Blend until smooth. Add more broth if needed. (Amount of broth used will depend on the size of your avocados & how thick/thin you want the sauce. I used about 1 1/2 cups of broth. This shouldn’t be a runny sauce.)
Step 9
Next add 2 tbsp of oil to a medium sized skillet over medium high heat. Cook steak bites in 2 batches for 1 minute on each side & set aside on a plate. (Don’t overcook, steak will continue to cook while resting!)
Step 10
Melt 4 tbsp of butter, squeeze in roasted garlic & 2 tbsp of parsley. Mash up garlic & stir until mixed well.
Step 11
Turn off heat and add steak bites back into skillet then toss with the roasted garlic butter. Let rest 5 minutes before serving
Step 12
While steak is resting, return buttered pasta to pot over medium low heat, pour in the avocado sauce & stir for 2-3 minutes or until pasta is heated through completely
Step 13
Plate the pasta & steak bites, top with freshly grated parmesan, parsley & red pepper flakes if desired. Enjoy!!
