Ingredients
8 servings
2 teaspoonsextra virgin olive oil
1 ¼ cupsonion
4garlic cloves
1 poundground beef
2 tablespoonschili powder
1 teaspoonground cumin
¾ teaspoonkosher salt
1 ¾ cupswhite rice
long-grain, cooked
1 x 14.5 ouncediced tomatoes with jalapeños
can, petite-cut
1 x 15 ouncecan black beans
2 cupmexican cheese
Instructions
Step 1
Heat a large skillet over medium-high heat.
Step 2
Add oil; swirl to coat.
Step 3
Add onion and garlic; sauté 3 minutes or until tender.
Step 4
Add beef; cook 4 minutes or until browned, stirring to crumble.
Step 5
Drain, and return to pan.
Step 6
Stir in chili powder, cumin, and salt.
Step 7
Add rice, tomatoes, and beans; cook over medium heat 2 minutes or until thoroughly heated, stirring occasionally.
Step 8
Sprinkle with cheese; cover and remove from heat.
Step 9
Let stand 1 minute or until cheese melts.
