Instructions

Step 1
Pat beef cubes dry and sprinkle with salt and pepper.
Step 2
Cook in pot with drizzle of oil until brown on all sides. Set aside.
Step 3
Saute onions and garlic until soft.
Step 4
Add bacon and cook until brown.
Step 5
Add carrots, celery, flour, beef broth, tomato, bay leaves, thyme (2 tsp dried thyme), guinness, salt, pepper, and browned beef. Mix.
Step 6
Cover and cook on low for 2 hours. Uncover and cook another 35 minutes.
Step 7
Serve over mashed potatoes.
