Ingredients

1 ¼ cupsdried couscous

1 ¼ cupswater
boiled

1 tspvegetable stock powder
1 cube crumbled

1garlic clove
minced

1 tspcoriander
or cumin powder

1 x 14 ozchickpeas can
drained

½ cupcoriander
finely chopped

½ cupparsley
or mint, finely chopped

1red onion
chopped

7 ozsun dried tomato strips in OIL
jar

4 ozrocket lettuce
chopped into 5 cm / 2" pieces

5 Tbspfresh lemon juice

1zest of lemon

½ tspcoarsely ground black pepper

2 ozfeta crumbled

Instructions
Step 1
Place chickpeas, couscous, vegetable stock powder, coriander and garlic in a large bowl.
Step 2
Pour over hot water, shake to level out. Cover with plate or cling wrap, set aside for 5 min.
Step 3
Fluff couscous with fork. Cool a bit.
Step 4
Add coriander, parsley, onion, sun dried tomatoes (including all oil), rocket, lemon juice and black pepper. Sprinkle zest across surface. Toss well to combine.
Step 5
Adjust salt and pepper to taste. Sprinkle with feta. Serve.
