Warm Chorizo Chickpea Cannelini and Feta salad

Ingredients
4 servings
100gChorizo
0.5canned chickpeas
0.5canned cannellini beans
10cherry tomatoes
halved
0.5Red onion
diced
2 TbsOlives
50gFeta
10Sundried Tomatoes
chopped
100grocket
50gCucumber
chopped
Oregano
1 TbspPesto
2 TbspBalsamic vinegar
Instructions
Step 1
• Dice chorizo and crisp in a pan, add onion to soften, add all Tomatoes beans and pesto to warm through, then balsamic at the end
Step 2
• Serve chorizo mix over salad
Step 3
• Crumble feta over the top
Step 4
• Goes well with bbq food or as a light lunch
